New Mexico State University houses the Chilli Pepper Institute. It was founded in 1992 and its mission is to study and cultivate chilli peppers and since its beginnings a lot of new U.S. varieties have emerged.

Chillies with this origin can be recognised by the prefix 'NuMex' in their name. The aim of the institute is to create new species without the use of gene manipulation technology, just by selection of particular attributes such as colour or flavour. The beautiful rainbow coloured 'NuMex Twilight' is one example and a milder habanero pepper variety also counts to its achievements.
