Parsnip has been part of the Central European diet for a very long time, then disappeared and recently resurfaced - now available as organic seed. The half-long roots with the bulk of their flesh concentrated in the upper part taste pleasantly spicy
and slightly sweet. The half-long feature also makes it much easier to dig the Halblange Weiße.

Sometimes people claim that the roots that have been exposed to frost are especially tasty - parsnip is a hardy plant. This immunity to frost also has the advantage that you can harvest your plants in winter. Parsnips can be used just like celery.

Growing instructions

Parsnips can be sown in early March. The ideal time in Central Europe is May. The biennial plant produces roots in the first year that can be harvested in the fall or winter. In the second year, it bears beautiful flower umbels that attract many beneficial insects.
