Celtuce is an ancient Chinese cultivated plant which is also called Wosun. The bitter leaves are picked and can be eaten in salads, but they are also very good as an animal feed. The plant forms a fleshy shoot, which is peeled and eaten raw or
steamed and has an exquisite taste - it is used just like asparagus, hence the name asparagus lettuce.
