Jack-By-the-Hedge is an interesting, native wild plant that is related to other wild herbs like charlock and Chinese cress and belongs to the crucifers. Depending on the time of year, the herb may taste more like garlic or cress. The blossoms and
seed pods are also edible raw and taste spicy like garlic. Out of the crushed, oily seeds, good herb mustard can be produced.

Unpeeled, the roots are said to be used similar to horseradish as far as they grow in nutritious garden soil. Apart from their use as a spice and salad plant, the plant can also be used as a dye plant.

The garlic root is a biennial, infrequently perennial, shrub plant, and a cold-germinator. Sow in autumn or very early spring, or keep cold for a period of some weeks (refrigerator). For stratification, mix the jack-by-the-hedge seeds with damp sand in a plastic bag. The sowing must be kept warm and moist for about 3 days (about 20°C / 64 to 72°F). After this period, place it in your refrigerator at a temperature of 0-5°C (between 25 and 39°F) for some weeks and check for sprouted seed regularly. Alliaria Petiolata loves half-shady locations and nitrogen-rich soils but can even prosper in the shade as long as the water supply is ensured.
