The Mexican kitchen can't be imagined without the chili variety 'Jalapeño'. Its green or red fruits are either used fresh as vegetables in salsas or as a spice in dishes, pickled and cut into rings, or smoked on the barbecue.


Smoked Jalapeños are called Chipotles then, they especially serve as a spicy ingredient for stews or sauces as their flavour only develops during longer cooking. This sauce has its name from the Mexican city Xalapa (former Jalapa).

All in all, Jalapeño chilis with their 2500-8000 Scoville rather belong to the milder chili varieties. The fruits are thick-walled with a rounded tip and a length of 7-8cm. Ripe fruits often show clear signs of suberisation. The plants reach a height of 50-150cm.
