Lamb's lettuce (or sometimes known as Corn Salad) is a hardy small leafed salad variety deriving from the valerian plant family. It belongs to the few last wintergreens doing well in the vegetable patch, during winter dormancy from late autumn till
early springtime. Packed with nutrients and rich in vitamins this distinctively nutty tasting salad plant is the home-grown highlight on your plate during wintertime.
When protected with some branches, a winter fleece or cultivated in an unheated greenhouse, lamb's lettuce continuously provides a source of fresh greens, sometimes even enduring temperatures down to -15 °C. Best of all, this annual plant is extremely modest and hardly needs any plant care. We only advise you not to pick leaves in a frozen state, as they tend to wither and decrease in volume otherwise. Another interesting fact about lamb's lettuce is that is has only been cultivated for less than a century and was only known in its wild form before that time.

Main harvest:
Broadcast directly outdoors from July to September and only lightly cover with soil. The ideal germination temperature is between +16 and 18 °C. At a temperature over +20 °C, corn salad seeds germinate poorly or not at all.

Harvesting is possible all throughout the winter if the salad is not frozen. In dry frost periods without any snow, we recommend covering the plants.
