The root of the marsh woundwort plant is a wholesome and nutritious food similar to the vegetable plant crosne, Stachys affinis. Its tubers have a pleasant mild nutty flavour, raw or cooked, but they tastte best when prepared like asparagus. They
can also be dried and ground into a powder used for making bread. Although quite small, they are fairly smooth and produced in a reasonable quantity so are not too tricky to handle. Despite the good taste of the root, one should take care: all parts of the plant emit an unpleasant smell when bruised!

The plant requires a moist soil for good root production.Sow spring in a cold frame, prick out the seedlings into individual pots once they are strong enough and plant them out in the summer, then it will be in flower till September. Harvest the tubers in autumn. Last but not least: bees and bumblebees like the plant a lot.
