Some wild American sunflowers form edible rhizomes and were staple foods among many North American tribes. The most famous root sunflower species is of course Helianthus Tuberosus, Topinambur. Helianthus Maximiliani forms somewhat smaller rhizomes
and is also used for culinary purposes. The tubers have a strong sunflower aroma and are eaten fried or cooked. The Maximilian sunflower is also a perennial ornamental plant - it grows up to 2 meters high and blooms until late autumn.
