The leaves of this South American shrub, which are called Ysop or Hyssop in Mexican, are sweet and minty in flavour with a hint of aniseed. It can be used for an infusion, for seasoning food or alternatively eaten raw in a salad.
The Aztecs used their variety of hyssop as a fragrant ornamental plant and as a remedy for open sores, and to this day an ointment with giant hyssop as main active ingredient is popular in Mexico.

In Central Europe, the giant hyssop is an annual plant and not entirely hardy. The individual plants should be planted with a distance of about 30cm and prefer well-drained soil and a sunny location.
Sowing: Preculture. Usually germinates in 1 - 3 months at around 20 °C. Prick out the seedlings into individual pots when they are large enough to handle. Plant the strong seedlings out in early summer.
