Skirret was cultivated until well into 18th century Europe for its edible roots. These can be eaten like salsify, boiled or fried. Besides this, roasted roots serve as a substitute for coffee. Heirloom variety.
Because of its relatively high natural sugar content, the plant was also ground, refined, and used as a sweetener before the by far more fertile sugar beet was spread.

Sow in rows or clusters from mid March to July directly into the ground outdoors, about 3-4cm deep. It is then recommended to pinch the seedlings out to about 5x10cm apart from each other and in rows with a distance of 20-30cm. Weed well at the beginning and water regularly.
