Yam bean (Pachyrhizus erosus)

Culitivated in pre-Columbian times, the jícama bean has persevered and found its way into many of todays Mexican dishes, raw as well as cooked. In Malaysia the mild white fruit is eaten with fermented prawn sauce. The seeds are toxic.
