Description

Commonly called yellow nutsedge or chufa sedga, one if its many names derives from the plant's almond shaped tubers, which are rich in starch, sugar and fat and have a nutty flavour: Earth almond. Roasted earth almond can be made into flour or a
juice which is served in Spain as 'Horchata de chufa'.

Cyperus esculentus var. sativus: approx 10 yellow nutsedge tubers
Sowing & Growing

Tubers are planted outdoors in mid-May (let them soak for several hours in water before planting). They may also prefer pot culture since they need plenty of heat to wake up from hibernation! The tubers allegedly tolerate frost down to -15 °C. Normally though, they are overwintered indoors.
