Description

Violet and other dark coloured carrots (Daucus carota) are increasingly commercially viable again. They are often called heirloom carrots because the first cultivated carrots probably had purple roots. In fact, however, most violet varieties offered
on markets are new varieties. The "Spanish Black" however, is a "real" old heirloom carrot, open-pollinated and perfect for harvesting your own purplre carrot seeds. The variety is somewhat stronger in taste than other color variants, and its ingredients differ from orange varieties. For example, the content in vitamins C, B1 and carotenoids is significantly higher.
The violet color is produced by so-called anthocyanins. This substance is also found in red grapes, black currants, blackberries and red cabbage and protects the human body naturally against oxidants. Caution: The colorant can easily rub off onto your skin and clothes while slicing the carrots.
