Description
The 'Aji Delight' is a remarkable chilli variety of the species Capsicum baccatum, distinguished by its lack of heat and intense fruity flavour. This makes it an ideal baccatum-type alternative to sweet peppers.
The plants are vigorous and high-yielding, producing numerous fruits that ripen from pale green to deep red. The thick-walled pods, measuring approximately 7–10 cm in length, are perfect for salads, omelettes or stir-fries. Even when cooked, the flesh remains firm, allowing the skin to be removed easily while retaining its structure.
Historically, Capsicum baccatum varieties are native to South America, where they have been valued for centuries in both culinary and medicinal contexts. 'Aji Delight' is a relatively new cultivar, representing the rich diversity of this species by combining traditional character with modern breeding.

Sowing and care
Sowing is best carried out indoors between February and April using low-nutrient seed compost. Keep the soil consistently moist but not waterlogged, and create an optimal microclimate with a transparent cover. At temperatures between 22 and 28 °C, seeds will germinate within 10 to 21 days. We recommend placing the tray in a warm spot above a radiator or, ideally, using a heated propagator.
Once the seedlings have developed two pairs of true leaves, they can be pricked out into nutrient-rich compost. A sunny position is ideal. Water regularly, but avoid waterlogging. After the last frosts in May, young plants can be moved outdoors.
Feed every two weeks with a potassium-rich fertiliser to support strong growth and fruit production. Plants can reach a height of around 80 cm and may require staking to support the heavy fruit set. Harvest once the fruits have turned deep red. Regular harvesting will encourage the plant to continue producing new pods.
