Scorzonera is a lesser-known heirloom root vegetable that is very often compared to asparagus. Since Spanish black salsify is harvested during the winter months, it is sometimes also called 'Winter asparagus'. The cultivar 'Annual Giant' is a particularly tasty variety with long, smooth and uniform roots of a dark color. The meat is bright white. The roots develop a medium to long size with substantial root thickness. The cultivar has been known since 1904.
