Commonly called yellow nutsedge or chufa sedga, one of its many names derives from the plant's almond-shaped tubers, which are rich in starch, sugar, and fat and have a nutty flavour. Chufas have already been used as nourishment in ancient Egypt. In autumn, the almond-shaped tubers are harvested. Roasted earth almond can be made into flour or a juice which is served in Spain as 'Horchata de chufa' and contains mashed earth almond, water, and sugar. In Ayurveda medicine, the plant is used for diverse indications that are linked to digestion. From the earth almond, a good cooking and frying oil can be gained. Roasted, they are also used as fishing bait.
