Originally from south-east Asia, this leguminous plant has been cultivated for over three thousand years. The seeds are valued by many vegetarians as a replacement for animal protein. Soya oil, flour and milk can also be won from the bean if it has not yet sprouted into the perfect ingredient for a stir fry.
