Shiso is a traditional Japanese and Korean spice, especially for sushi. It's also used in Ume preparations (Japanese apricot whose fruits are often pickled in salt). The leaves are consumed freshly and have a hard-to-describe, very own flavour which remotely reminds of mint. The oil, which is gained from perilla frutescens, was traditionally used for making umbrellas waterproof and played an important part in colour and ink production.
