Romanesco is an heirloom Italian fennel, producing bulbs that can weigh as much as 800g. A vigorous, bolt-resistant vegetable fennel with the typical slightly sweet fennel flavour. Vegetable fennel is a cultivated version of the wild plant that forms a very large bulb and is not grown primarily for its seeds. Though of course you can let the plants keep growing – if the bulbs are undersized, for example – and then harvest them as a tea or kitchen herb in the autumn.
