Black mustard is one of the oldest spices known in Central Europe and has its origins in the Mediterranean region. It is an annual herbaceous plant that is grown especially for the extraction of its spicy seeds which positively affect digestion.
The seeds, which must be removed from their shells for processing into edible mustard, have different colors and can be dark brown, gray or black in color.

Black mustard seeds are used in Indian cuisine for curries, where they are typically used roasted in oil to produce a distinct nutty flavor. The resulting oil is also used for culinary purposes. The use of the plant as a condiment and for mustard production however has become less and less in the course of the 20th century, as other crop varieties are more suitable for mechanical harvesting and efficient processing.

Brassica nigra is quite easy to care for and thrives in a variety of soils, but particularly well in calcareous substrates. Sow broadcast at mild temperatures in spring directly into the field. Mustard loves sunny locations, grows quickly and can become up to 150cm high. A harvest of seeds can be expected in early autumn. It is also a very good green manure and bee pasture plant.
