The plant is usually called yellow mustard because of its bright yellow flowers, but because of its white seeds it is also known as white mustard. It is a typical green manure plant from the cruciferous family which is good at loosening the soil with its roots, protects against erosion and combats nematodes. Of course, yellow mustard is also a very typical spice plant, after all its seeds provide the basis for mustard. The young leaves taste spicy and can be added to salads and Green Smoothies as seasoning. Since it is an annual, frost-sensitive plant which can be sown from April to September, the yellow mustard is very well suited as a cover crop on already harvested vegetable patches. After the first frosty nights, the plant freezes and its remains can be left as a protective layer of mulch on the beds, which is then simply hoed in or composted in spring.
