Bronze Fennel is one of the most decorative herbs – with its extremely fine, delicate bronze-brown leaves and luxuriant growth it looks wonderful in any flower bed and works especially well in a classic cottage garden. In the kitchen the leaves and stems are mainly used for seasoning, the seeds as a herb tea. In terms of flavour and the substances it contains, Bronze Fennel is just the same as Sweet Herb Fennel. It aids digestion, has calming effects, stimulates the appetite and relieves cramps. As a herb the leaves go especially well with garlic, onions, hot chili peppers, tomatoes and carrots. The flavour works very well with many Italian vegetable antipasti. Anglers love using the stems to flavour fish during the smoking process.
