The leaves of this South American shrub, which are called Ysop or Hyssop in Mexican, are sweet and minty in flavour with a hint of aniseed. It can be used for an infusion, for seasoning food or alternatively eaten raw in a salad. The Aztecs used their variety of hyssop as a fragrant ornamental plant and as a remedy for open sores, and to this day an ointment with giant hyssop as main active ingredient is popular in Mexico.
