The parsnip variety 'Tender and True' belongs to the uncomplicated and robust varieties of this anyways easy-to-grow vegetable variety. It forms very long (up to 10 cm) and thick roots that have a fine, slightly nutty, and rather sweet taste. It even improves by light frosts. Parsnip, therefore, belongs to the winter vegetables that can also be harvested well freshly in late autumn and mild winter. Only in the second year, the plant forms large, beautiful umbels that are carried gracefully by a very high stalk. In the Roman Empire, parsnip has already been cultivated as a tasty root vegetable. It belonged to every vegetable garden until it was replaced by the cultivation of carrots and potatoes in the 18th century.
