King’s Spear is a perennial wildflower from the Mediterranean region. As it’s winter-hardy it also grows well in Central Europe, adorning our gardens with its stems of gorgeous yellow flowers and its grass-like evergreen foliage. The delicate starry flowers are set on spikes and open in succession, which means you can count on an extended flowering period. The flowers are fragrant and also much loved by insects as a valuable source of food. In fact this is a very attractive perennial for all seasons – the buds, flowers and also the fruit stems are highly decorative and the fine, evergreen leaves add structure to borders beautifully, even in winter. The flower stems work very well as cut flowers. A little-known fact: all parts of King’s Spear are edible and were a valued food source for our ancestors. The roots in particular can be served boiled, roasted or pureed – while the flower stems also provide delicious and decorative edible flowers.
