Mizuna is of Japanese origin and the slightly sweet tasting leaves can be eaten raw or cooked at any stage from seedling to mature plant. When young, they taste extraordinary good as a salad, but can also be prepared as greens (like spinach) or added to soups.

Steamed, the stalks also make a delicious garnish. Japanese mustard will regrow rapidly after being harvested. After the harvest, Mizuna regrows fast and perfectly suits as productive cut vegetables.

Sow the seeds directly into the bed or in a greenhouse from April to September. However, Mizuna also grows when sown in an unheated greenhouse from autumn to spring and also forms leaves during winter. The plant is intolerant of drought, it needs to be grown in moist, fertile soil to form lush leaves. Fairly hardy and tolerating summer heat, Mizuna doesn't like frost and raw weather. It's a fast-growing plant and can be harvested already some weeks after sowing and you can continue cropping for 10 months before it will start to produce seeds.
