is written evidence of the cultivation of orache seeds in Central Europe already around 800 AC in the estate of Charlemagne and some time later with Hildegard von Bingen.
The leaves are harvested and can be eaten either raw as a salad or boiled like spinach. When spinach made its entry into European vegetable gardens in the 16th century, it all but drove out the garden orache, and since then it is somewhat of a forgotten delicacy, as its leaves taste much milder and the plant is generally more vigorous and more productive than spinach.
Orache is not only useful in the kitchen, but also as a medicinal plant, dye plant, and for the production of biomass.

Sowing & cultivation
- Sowing period: Outdoors as early as possible when the soil is open. This mostly is the case from March. Until August, it can be resown monthly.
- Sowing depth: 1-2cm in rows or broadcast. Only work in flat.
- Ideal germination temperature: The green orache already germinates at very low temperatures.
- Row spacing: 40cm
- Planting distance: 35 x 15cm
- Location: Sunny but also tolerates half-shade
- Soil: The green orache is very undemanding and prospers on any soil, also on salty soil.
- Care: Needs little nutrients, likes it continuously moist. While being a young plant, regular chopping promotes growth
- Harvest: 3-5 weeks after the sowing if the plants have reached a minimum height of 20-30cm. Harvest either the complete plant or pluck single leaves when the plant is larger. When the plant comes into heyday, it loses taste and the leaves turn coarser. By cutting the plant radically until the lowest leaf pair, a new budding can be forced and a second harvest after 4 weeks is possible.
Once plugged, the leaves only survive a few hours before they wither. Therefore, they should be consumed very fast. Alternatively, the leaves of the green orache can be frozen like spinach. - Family: Amaranths (Amaranthaceae)
