Gonzales è una varietà di erba cipollina da coltivazione biologica con foglie strette e piuttosto robuste che crescono in maniera vigorosa. L'erba cipollina è probabilmente una delle piante più importanti in un giardino di erbe aromatiche. In natura cresce insieme ad altre specie di porri selvatici su prati di montagna asciutti. Viene coltivata fin dal Medioevo.

Il gusto dell'erba cipollina è particolarmente buono quando è appena raccolta. I panini al burro con erba cipollina fresca sono decisamente deliziosi ed è un ingrediente che non può assolutamente mancare in formaggi freschi, burro ed intingoli alle erbe. Oltre agli steli, anche i fiori sono commestibili e sono perfetti per decorare insalate e piatti di verdure.

Inoltre, l'erba cipollina è un 'eroina' che protegge le altre piante. Il suo odore, infatti, tiene a distanza molti parassiti ben noti; per questo, ad esempio, è spesso piantata insieme a fragole e pomodori. Anche le rose sembrano beneficiare della sua vicinanza.
