Italian garden culture in bright green

Green Cauliflower ‘Verde di Macerata’ is a traditional Italian vegetable variety from the province of Macerata in the Marche region. There, the so-called Cavolfiore verde has been grown for generations as a regional autumn and winter vegetable. Its large, tightly closed heads develop a striking pale green colour that is largely retained even when cooked.

Cauliflower is one of the oldest cultivated forms of vegetable cabbage. Its ancestors probably originate from the eastern Mediterranean region. From the late Middle Ages onwards, it was further developed especially in Italy before spreading throughout Europe from the 16th century. ‘Verde di Macerata’ preserves this Italian cultivation tradition in the form of an open-pollinated variety that clearly stands out from ordinary white cauliflower.

The medium-early maturing plants form strong dark green leaves that partially enclose the developing head. With good care, the round, finely textured heads can reach a weight of around one kilogram. Their flavour is mild, aromatic and pleasantly cabbage-like. Green Cauliflower ‘Verde di Macerata’ is suitable for steaming, boiling, baking and frying, as well as a colourful ingredient for soups, curries and vegetable dishes.

Sowing and care

Seeds can be started indoors from March to June in pots, trays or seedling modules. Place the seeds about 0.5 to 1 cm deep in loose seed compost and keep evenly moist at around 18 to 20 °C. Under favourable conditions, germination takes place within about five to eight days. After emergence, the young plants should be kept in a brighter and slightly cooler position so that they grow compact and strong.

As soon as the plants are sufficiently developed, plant them out into a sunny to partially shaded bed at a spacing of about 45 to 60 cm. Cauliflower is a heavy feeder and needs deep, humus-rich and nutrient-rich soil. A good supply of mature compost and regular watering encourage the formation of large, closed heads. Drought and strong fluctuations in water supply should be avoided. Successional sowing extends the harvest period. To protect against cabbage root flies, cabbage white butterflies and other cabbage pests, the use of a fine-mesh crop protection net is recommended.
