The summer savory goes well with beans. In mixed cultivation and intercropping, it keeps lice away from the bean plants, and as a seasoning herb for bean dishes it is simply perfect.

Genuine summer savory is not hardy and therefore must be re-sown each year. It is native to the Mediterranean region and was probably spread in Central Europe by the Romans. Since the Middle Ages it has been used as an aromatic and medicinal herb.

Preculture indoors in pots from March on. Sow outdoors from April to mid-June. Savory needs light to germinate. Therefore only press the seed lightly into the soil and keep moist.
Summer savory likes loose soils and a warm, sunny, sheltered location. Can survive temporary drought pretty well. Regular pinching encourages branching. The best time for harvesting is just before flowering in late June / early July. Simply cut off the plants 10 cm above the ground and use as fresh culinary herbs, dry in bunches or freeze.
