The term Asian salad refers to various Asian leafy vegetables, mostly from the group of mustard greens. Typical features are serrated or spoon-shaped leaves, colours from green to dark red and flavours ranging from mild and nutty to distinctly spicy.

Many Asian salad greens grow very quickly and can be harvested just a few weeks after sowing. With regular successive sowing, fresh leaves for salads, wok dishes or soups can be harvested over many months.

Sowing and growing Asian Greens

Asian greens are easy to grow and usually develop very quickly. Direct sowing in garden beds is possible from spring onwards as soon as the soil can be worked. Many varieties can be sown from March to September.

The seeds are placed about 1 to 2 cm deep in loose, humus-rich soil and kept evenly moist. For baby leaf harvests they can be sown quite densely, while larger plants need a little more space. A sunny to partially shaded location and regular watering ensure tender, aromatic leaves.

As Asian greens grow quickly, sowing again every two to three weeks is worthwhile. This allows fresh leaves to be harvested repeatedly over a long period.

Typical Asian Greens

Among the best known Asian greens are mizuna with finely cut leaves, tatsoi with compact rosettes and pak choi with fleshy leaf stalks. Leaf mustards such as “Red Giant” add a clearly spicy, mustard-like flavour to salad mixes.

Many varieties are suitable both for fresh salads and for cooking. Larger leaves can be briefly stir-fried in a wok or used as aromatic leafy vegetables.
