Borage, botanically known as Borago officinalis, is also known as cucumber herb. The name refers to the fresh, slightly cucumber-like flavour of the young leaves, which are traditionally used in cold dishes, herbed quark, salads and regional herb recipes. The blue flowers are also decorative and make borage a striking plant in the herb garden.
In the garden, borage is not only interesting as a culinary herb, but also as a valuable flowering plant for insects. The star-shaped flowers are readily visited by bees and other pollinators and continue to appear over a long period. This makes borage particularly suitable for natural gardens, herb beds, flower strips and as a lively companion plant in the vegetable patch.
As an old herb plant, borage has a long history in the kitchen, cottage garden and traditional herbal use. However, some restraint is advisable when using it in cooking: the herb contains pyrrolizidine alkaloids and should therefore not be eaten regularly or in large quantities. For occasional use as a traditional seasoning herb and for decorative use in the garden, borage nevertheless remains a fascinating and versatile plant.
