Traditional Cogwheel Tomato with Dense Flesh

The beefsteak tomato 'Zahnradtomate' is a rare, open-pollinated organic variety producing large, pink to raspberry-red, strongly ribbed fruits. In cross section they resemble a cogwheel - hence the name. Typical of this traditional cogwheel type are the high flesh content, few seeds and partly hollow chambers. These very characteristics make it an excellent cooking and processing tomato.

Historically, it belongs to the old beefsteak types that were selected over generations in rural gardens. Deeply furrowed, toothed tomatoes of this kind were especially valued for stuffing, baking and preserving. While many modern supermarket varieties are bred primarily for transport durability, the Zahnradtomate stands for flavour, diversity of form and traditional kitchen use. Today it is mainly preserved by organic seed growers and heritage seed savers and is increasingly cultivated again in home gardens.

In terms of flavour, this old tomato variety impresses with sweet, fruity, aromatic flesh and a rich, juicy texture. It is ideal for making your own tomato purée, cooking down sauces or preparing stuffed tomatoes. Its large cut surface also makes it decorative on plates and tomato platters.

Sowing & Care of the Beefsteak Tomato 'Zahnradtomate'

Start seeds indoors from late February to April in low-nutrient seed compost at a steady temperature. Sow the seeds about 0.5 to 1 cm deep. After germination, place in a bright position and prick out in good time. Plant out from mid May after the last frosts in a fully sunny, warm and sheltered spot - ideally in a greenhouse, polytunnel or outdoors with rain protection.

As a tall cordon tomato, it reaches around 180 to 200 cm in height and requires sturdy support. Regularly removing side shoots and training to two or three stems improves yield and fruit quality. As a heavy feeder, it needs nutrient-rich soil and consistent watering. Extreme fluctuations between drought and heavy watering should be avoided to reduce cracking or blossom end rot in the large beefsteak fruits.
