When discussing the world's hottest chillies, the Scoville scale is indispensable. In 1912, the chemist Wilbur Lincoln Scoville developed a method for measuring the pungency of chillies, which remains the standard for comparison to this day.
Although the original testing method has since been replaced by modern analytical techniques, heat levels continue to be quoted in Scoville Heat Units (SHU). Today, the scale theoretically reaches up to 16 million SHU – values that are almost inconceivable and practically inedible.
Currently, the most famous representative of extreme heat is the ‘Carolina Reaper’, a Capsicum chinense hybrid that earned a place in the Guinness World Records in 2013. Its average heat rating stands at over 1.5 million SHU, with peak values measured at more than 2 million SHU.
Alongside the Carolina Reaper, you will find its predecessors and other super-hot chilli varieties that also achieve legendary Scoville ratings.
